Next week (31 July), Michelin-starred chef Paul Welburn will be cooking up a storm in The Pompadour’s kitchen as the final act in the exclusive Guest Chef Series. Paul, who worked alongside Gary Rhodes for seven years and has 17 years’ culinary experience, is Head Chef at the Oxford Kitchen, delivering nostalgic British dishes with a modern twist. Next month, the three AA rosette restaurant, The Pompadour in Edinburgh, will launch its exclusive Guest Chef Series, bringing five chefs with Michelin-starred experience to the capital for the first time between 11 May and 31 July. The first chef to launch this gastronomic experience and showcase his distinctive modern French cuisine is London-based Phil Howard on 11 May. The Pompadour Head Chef, Daniel Ashmore has designed a very special menu to celebrate all things truffle this autumn. Diners will be able to indulge in a delicious four-course menu, with each course inspired by truffles, during the Tempting Truffles Dinner on Thursday 8 November at 6:30pm. An ambitious challenge, the menu has been inspired by Chef Dan’s love of this rare, decadent ingredient. Later this month, The Pompadour welcomes Executive Chef, James Wang from its sister hotel in Beijing to co-host a series of Cantonese-British evenings in The Pompadour with Head Chef, Daniel Ashmore. Together the chefs will delight guests with an eight course collaborative tasting menu, served in the beautifully restored Pompadour dining room overlooking Edinburgh Castle. Daniel Ashmore, Head Chef at The Pompadour, was awarded Fine Dining Chef of the Year at the Scottish Food Awards on 20 May. With a wealth of experience, Chef Dan has worked for various top kitchens in London including Michelin-starred restaurants, The Square in Mayfair and La Trompette. Moving to Edinburgh, Dan worked at Number One and Hadrian’s Brasserie at The Balmoral before joining The Pompadour in March last year.
